French Onion Soup

Ingredients (serve 4 persons)
4 sliced onions (try mixtures and even leeks)
50g butter
1tbsp olive oil
1litre good quality beef stock
1-2 cloves crushed garlic
1tbsp flour
1/2 cup dry white wine
1-2tbsp cognac or brandy
bay leaf, small spring of thyme
salt and pepper
4 slices of grilled baguette
Gruyere cheese

Steps
1. Heat a heavy based saucepan on medium heat add butter and oil.
2. Add sliced onions and salt, cook until soft and golden brown.
3. Add garlic and stir, then white wine and reduce.
4. Add flour and cook for 2 minutes. Add the stock and herbs, then bring to a boil and simmer for 20 minutes. Taste and season with salt and pepper. Add Cognac or Brandy.
5. Pre-heat the griller to full. Ladle the soup into oven-proof bowl. Place the slices of grilled baguette (used garlic and olive oil) and grated Gruyere cheese on top of the bowl of soup.
6. Grill until the cheese turn golden brown.
